One of the great joys of food is that you can use it to show someone you care about them, mostly figuratively, but sometimes also literally. Here, I shaped thick-cut bacon into cute little hearts and sprinkled them with sweet brown sugar for a fun addition to today’s Valentine’s Day breakfast. Hope you had a great day, honey!
I’m not a big breakfast person, except on the weekends (or for dinner any night of the week — love breakfast for dinner!). The other day, I had a couple of apples hanging around, looking for a greater purpose. I then spied with my little eye my Grandma Leona’s cast iron skillet, and I knew they were destined to work together that day. Here, juicy apples get enrobed with a sweet batter that puffs up happily in the oven.
The other day, I bought two pints of blueberries (on sale!) but only used one. I knew the second container would go south if I didn’t intervene, so as we watched the Olympics last night (GO USA!) I whipped up these quick and easy blueberry muffins. These couldn’t be easier — just 7 ingredients. Perfect for breakfast!
My parents are big fans of tropical fruit flavors; my mom, true to her Filipino heritage, loves desserts that incorporate any combination of pineapple, coconut, and mango. She requested a pineapple pie, and we were happy to oblige. Here, the zingy pineapple combines with sweet brown sugar to create a delicious, tropic-inspired dessert.
