Ham and Giardiniera Scramblers

A while back, I made a giant batch of giardiniera, which has graced our pizzas and sandwiches with its amazingness ever since. Wanting to pep up breakfast a bit, I tossed some into my hammy scrambled eggs, and it was delicious. Using the giardiniera pickling liquid in place of plain oil for cooking adds an extra layer of flavor. This was great on its own, but would also be a tasty, one pan filling for breakfast burritos.

4 oz. ham, diced

1/4 cup giardiniera pickling liquid

1/4 cup giardiniera, drained

3 eggs, beaten

4 large mushrooms, sliced

1 tsp garlic salt

Pepper to taste

1Spray a skillet with nonstick cooking spray and add the giardiniera pickling liquid.

2Over medium heat, saute the ham, mushrooms, and drained giardiniera until heated through, about 2-3 minutes.

3Add the eggs and stir until cooked and scrambled, about 3 minutes more.

4Season with garlic salt and pepper.
