Glowing Jack-O’Lantern Cake

When cruising Pinterest for Halloween party ideas, I was taken with this recipe for frosting that would glow under a blacklight. I’d seen some other recipes for pumpkin-shaped cakes made with two Bundt cakes, so merging the two together made sense. This glowing frosting makes a jack o’lantern cake pop on the party table.

INGREDIENTS:

    DIRECTIONS:

    1. Preheat oven to 325F. Spray a 9″ x 13″ brownie pan with cooking spray. Set aside.

    2. Stir the brownie mix, oil, eggs, milk (minus 1 tbsp), and vanilla together until well combined. Add 1/4 cup of the chocolate chips, 1/4 cup of the toffee bits, and 1/4 cup of the crushed pretzels to the batter and stir well. Pour into the pan evenly. Bake for 25 – 30 minutes. Remove from oven and allow to cool for 15 minutes.

    3. In a microwave safe bowl, add the butter, caramels, and 1 tbsp of milk. Microwave on high power in 20 second intervals until melted together and smooth, stirring to combine. Drizzle the caramel mixture on top of the brownies, then sprinkle with the rest of the chocolate chips, toffee bits, and pretzel bits.
