Ham and Giardiniera Scramblers
A while back, I made a giant batch of giardiniera, which has graced our pizzas and sandwiches with its amazingness ever since. Wanting to pep up breakfast a bit, I tossed some into my hammy scrambled eggs, and it was delicious. Using the giardiniera pickling liquid in place of plain oil for cooking adds an extra layer of flavor. This was great on its own, but would also be a tasty, one pan filling for breakfast burritos.

- Spray a skillet with nonstick cooking spray and add the giardiniera pickling liquid.
- Over medium heat, saute the ham, mushrooms, and drained giardiniera until heated through, about 2-3 minutes.
- Add the eggs and stir until cooked and scrambled, about 3 minutes more.
- Season with garlic salt and pepper.
