Honey Garlic Slow Cooker Meatballs

Honey, and garlic, and meat, oh my!!! Little meatballs are a super easy to eat appetizer for your guests! Just provide the toothpicks! You don’t even need to plate these, just keep them in a slow cooker on warm, and they will be hot and ready for the entire duration of your party!

INGREDIENTS:

DIRECTIONS:

  1. First we’ll make the meatballs.. then we’ll make the sauce after. If you have a Kitchenaid mixer, this would be the time to use it!

  2. All the ingredients for meatballs in a bowl, ready to mix!

    For the meatballs, combine the cream, eggs, and mix them together first in a large bowl, and mix or whisk them together.

    Now add the breadcrumbs, 8 cloves of minced garlic, minced onion, salt, and pepper into the same bowl. Crumble in the ground pork and beef. Mix all ingredients together until everything is evenly distributed. Do not overmix and turn it into a paste though, stir it just until the point where the ingredients are evenly distributed and there are no lumps or clumps of anything.

  4. Some people will cook meatballs like these in the crockpot.. but our method was to first bake the meatballs and then add them to the crockpot with sauce after that. So we are not actually cooking them in the crockpot, just keeping them warm with the sauce. So with that said, go right on ahead and pre-heat your oven to 375 degrees.

  5. While the oven is heating up, grab a baking pan, and start to create your meatballs, and lay them on the pan one by one.

    When the oven is at temp and you have a full sheet of little balls of soon-to-be-tasty meat, slip the pan into the oven and wait 10-15 min.

  7. While the meat is baking, it’s time to make the magic sauce! Combine 8 cloves of minced garlic, honey, ketchup, soy sauce, and butter in a saucepan or your crockpot.

    We need to heat this sauce, so you can do this in a saucepan on the stove on medium heat if you like, or if you’re going to keep the meatballs warm in a crockpot anyways, just go ahead and throw the ingredients in your crockpot, set on high.

  8. Heat and stir for about 5-8 minutes, and then reduce to low heat until the meatballs are done and out of the oven.

  9. Just a bunch of tasty meatballs hanging out in a crockpot full of honey garlic bbq sauce!

    When the meatballs are fully cooked, plop them into the sauce and keep it warm!

    PRO TIP: To make sure your meatballs are cooked correctly, test the biggest one you can find to make sure there’s no pink inside.. this is ground meat, you don’t want to eat it rare!

RECIPE NOTES:

  • We used our food processor to dice the onion, as well as to mix everything. It did present some challenges however.. next time we make these, we’ll probably use a Kitchenaid mixer to mix everything, and we’ll just mince the onion and garlic either manually or still maybe with a little food chopper like this.

  • When cooking the balls, it’s good if they get a little browned or crispy on the outside sometimes!! If you can achieve that without overheating the insides, you will go far… you could try the broiler on high for a few minutes.. I might try that next time!
