Quick and Easy Blueberry Muffins
The other day, I bought two pints of blueberries (on sale!) but only used one. I knew the second container would go south if I didn’t intervene, so as we watched the Olympics last night (GO USA!) I whipped up these quick and easy blueberry muffins. These couldn’t be easier — just 7 ingredients. Perfect for breakfast!

Preheat oven to 400F. Line a muffin tin with paper cupcake liners. Set aside.
In a large bowl, mix together the Bisquick, sugar, brown sugar, egg, and oil thoroughly. Gently stir in the blueberries. Evenly divide the batter into the muffin cups, filling each about 2/3 full. Bake for 15 – 18 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean. Allow to cool.
