Roasted Banana-Blueberry Bread

    DIRECTIONS:

    1. Gather your ingredients. Preheat oven to 350F.
    2. Place the bananas on an unbaked baking sheet.
    3. Bake the bananas for 15 minutes, or until the peels turn black. Set aside.
    4. In a large bowl, combine the butter, egg, and vanilla until well mixed.
    5. Add the flour, sugar, baking soda, and salt and mix well. Set aside.
    6. With a paring knife, cut the ends off the bananas, then cut a slit through the peels lengthwise.
    7. Using a spoon, scoop the banana flesh into a bowl and mash until mostly smooth (some lumps are fine). Add to the dough mixture and stir well.
    8. Add in the blueberries and fold in gently.
    9. Pour mixture into a 4″ x 8″ inch loaf pan that is sprayed with nonstick cooking spray.
    10. Bake for 1 hour.
    11. Cool on a rack. Remove from pan and slice to serve.

    • Sometimes inspiration hits as I wander the aisles of the grocery store. While in the produce section the other day, I was drawn to the ripe bananas and the happy little blueberries, and thought they would make a great combination.
