Roasted Banana-Blueberry Bread

Roasting the bananas gives a richer, more intense sweetness to the fruit, which complements the freshness of the blueberries nicely. This can be served warm with a bit of butter for a nice snack or breakfast treat, or with ice cream for a neat little dessert.

Stella and Daniel Antic'S RECIPE NOTES:

  • Sometimes inspiration hits as I wander the aisles of the grocery store. While in the produce section the other day, I was drawn to the ripe bananas and the happy little blueberries, and thought they would make a great combination. Roasting the bananas gives a richer, more intense sweetness to the fruit, which complements the freshness of the blueberries nicely. This can be served warm with a bit of butter for a nice snack or breakfast treat, or with ice cream for a neat little dessert.
